Bahan-bahan:<br />
1 buku mentega (250g)<br />
1 1/2 cawan gula(dikisar halus)<br />
5 biji telur saiz A/B<br />
2 1/2 cawan tepung naik sendiri<br />
Jus perahan sebiji oren + susu segar = 1/2 cawan<br />
Parutan kulit oren(2 biji)<br />
<br />
Cara-cara:<br />
Panaskan oven selama 10 minit dengan suhu 170c.<br />
Pukul mentega dan gula sampai putih dan berkrim. Masukkan telur satu persatu. Pukul hingga sebati kemudian masukkan parutan kulit oren. Masukkan tepung selang seli dgn cecair.<br />
Kaup balik guna spatula.<br />
Jangan kacau lama takut overmix, nanti kek tak menjadi moist malahan keras.<br />
Kemudian masukkan ke dalam loyang bersesuaian yang telah dialas dengan baking paper.<br />
Bakar suhu 170 selama 45~50 minit atau ikut kesesuaian oven masing-masing dengan menggunakan api atas bawah.<br />
Terbalikkan kek atas redai kek dan biarkan sekejap kemudian terbalikkan semula kepada kedudukan asal.<br />

Ada juga mencuba teknik sponge dough seperti resepi Queen Bread yang agak popular di kalangan blogger masakan pada masa itu.<br />
<br />
Maisya ada menjadi ahli kepada Kelab Roti, sebuah group di FB. Banyak juga tips dan ilmu baru yang dipelajari. Contohnya,<br />
1)selama ini Maisya selalu guna air suam untuk buat roti tapi sebenarnya penggunaan air sejuk/air ais sangat bagus untuk menghasilkan roti yang lembut dan bertekstur halus, terutamanya jika uli doh menggunakan mixer atau breadmaker kerana semasa proses menguli doh akan menjadi panas.<br />
2)selama ini juga Maisya selalu menggunakan teknik merehatkan doh 2 kali( uli->biar naik 2 kali ganda->uli buang angin->bentukkan->biar naik 2 kali ganda->bakar), tetapi rupanya selepas diuli boleh terus dibentukkan (uli->bentukkan->biar naik 2 kali ganda->bakar). Cara ini lebih cepat dan doh lebih senang untuk dibentukkan.<br />
3)kuantiti yis boleh dikurangkan untuk melambatkan proses pengembangan doh. Anggaran 4g yis kering untuk 1kg tepung. Doh boleh diuli pada waktu malam, dibentukkan dan dibiarkan (bertutup) untuk dibakar pada awal pagi esoknya.<br />
4)tips menggunakan BM(breadmaker) Tesco, pilih menu no 8. Selepas uli yang pertama, terus tekan start beberapa saat untuk reset dan pilih menu no 8 sekali lagi. Selepas selesai uli yang pertama boleh terus keluarkan daripada BM dan bentukkan. Untuk breadmaker, jika pilih untuk uli dan terus bakar, hanya guna anggaran 2 sudu kecil(8g) yis sahaja untuk 500g tepung.<br />
5)doh yang siap diuli akan kelihatan berminyak, lembut dan berat serta boleh ditarik nipis seperti doh roti canai. Sapukan minyak pada tangan untuk lebih mudah mengendalikan doh.<br />
6)sebelum dibakar, sapukan doh dengan bancuhan susu tepung dan air. Selepas bakar juga sapu sekali lagi untuk mendapatkan permukaan yang cantik berkilat.<br />
7)segera keluarkan roti daripada loyang selepas dibakar dan sejukkan di atas redai supaya bahagian bawah roti tidak lembap.<br />

Awal tahun ini Maisya berkesempatan menghadiri kelas membuat roti oleh Mamazieza. Walaupun Maisya dah lama buat roti tetapi selama ini hanya berguru dengan youtube, forum, blog dll sahaja. Teringin pula belajar teknik yang betul.<br />

2) formula untuk tentukan berat doh yang sesuai untuk loyang adalah 1/5 daripada berat air yang boleh diisi dalam loyang tersebut (sesetengah loyang ada ditulis siap-siap pada badan loyang berapa berat doh yang sesuai )<br />
3)doh jangan diletak seketul besar terus. Bahagikan kepada 4 doh kecil. Gulung doh seperti buat kek gulung, dan susun keempat-empat doh di dalam loyang. (Boleh rujuk video Pak Agus di bawah untuk lebih mudah memahaminya)<br />
4) seeloknya doh jangan biar naik sampai memenuhi loyang , tinggalkan ruang anggaran 1/2 inci semasa dimasukkan ke dalam oven untuk dibakar<br />
5)untuk oven seperti yang saya guna iaitu Pensonic 17L, gunakan suhu 175 C selama 40 - 45 minit, api atas dan bawah, letakkan di rak tengah (pusing loyang selepas 30 minit supaya pembakaran sekata)<br />

<span style="color: #666666;">1/2 teaspoon salt (omit if u’re using salted butter)</span><br />

<span style="color: #666666;">¾ cup sugar </span><br />
<span style="color: #666666;">2 teaspoons grated lemon zest </span><br />
<span style="color: #666666;">125gm unsalted butter, softened </span><br />
<span style="color: #666666;">1/2 teaspoon pure lemon extract</span><br />
<span style="color: #666666;">Gel or powder food coloring</span><br />
<span style="color: #666666;">2 tsp vanilla essence</span><br />

<span style="color: #666666;">1. Preheat the oven and put a rack in the middle or upper third of the oven. Butter two 5 inch pans and line with buttered parchment paper.</span><br />
<span style="color: #666666;">2. Sift together the flour, baking powder, and salt. In another bowl, whisk together the egg whites and buttermilk. I whisked the mixture using hand for about 1 minute. </span><br />
<span style="color: #666666;">3. Cream the butter and sugar in a mixer on medium speed for a full 3 minutes until very light and fluffy. </span><br />
<span style="color: #666666;">Beat in half of the egg-buttermilk mixture, then flour mixture, then the last of the egg-buttermilk mixture, and finally the last of the flour, beating until the batter is smooth. Beat the entire batter on medium high for two minutes until completely smooth and mixed.</span><br />
<span style="color: #666666;">4. Divide the batter in 6, dye each batter with different colour. Bake 20 minutes, rotating halfway through, or until a thin knife inserted in the middle comes out clean. Cool in the pans five minutes, then turn out onto a cooling rack. To ensure moistness, once the cakes are cooled, wrap immediately and chill.</span><br />

<span style="color: #666666;">1 cup powdered sugar</span><br />
<span style="color: #666666;">1 tablespoon vanilla extract</span><br />

<span style="color: #666666;">To make the frosting: Using the whisk attachment, whip the butter and cheese on high speed for about 5 minutes, scraping the bowl down as necessary. Reduce the speed to low and slowly add the powdered sugar until all is incorporated. Add the vanilla and mix to combine. Increase the speed to medium high and whip for a few minutes until the frosting is light and fluffy, scraping the bowl as necessary.</span><br />

<span style="color: #666666; font-family: Verdana, sans-serif;">1. Perap ayam dengan bahan perapan lebih kurang 30 minit.( lebih lama lebih bagus )</span><br />
<span style="color: #666666; font-family: Verdana, sans-serif;">2. Masukkan ayam ke dalam periuk( gunakan periuk yang dasarnya tebal ). Ratakan di dasar periuk. Tuangkan beras ke atasnya. Taburkan pula daun pudina, daun ketumbar dan bawang goreng. Renjiskan air saffron atau pewarna kuning. Tutup periuk dengaan tudung periuk. Pastikan ditutup dengan rapat supaya wap tidak keluar. Boleh letakkan kain kecil di mulut periuk sebelum ditutup( seperti ditunjukkan dalam video ) atau letakkan sesuatu yang berat di atas tudung periuk ( Maisya letakkan lesung batu ...hi..hi..)</span><br />

Jumpa resepi ni di internet ( from a few blogs ). Ni bukan resepi untuk dimakan ye. Masa mula-mula tengok resepi ingatkan dia salah taip sebab guna 1 cawan soda bikarbonat! Tapi bila check kat blog-blog lain pun tulis kuantiti yang sama, maknanya betullah resepi tu. Ada lagi beberapa resepi lain untuk buat playdough ni, cuba google kalau nak. Simpan playdough dlm bekas kedap udara di dalam peti ais supaya tahan lama. Jangan biarkan terlalu lama terdedah , nanti dia kering. Kalau nak buat banyak-banyak warna, boleh letak warna last sekali(sewaktu menguli)...selepas dibahagi-bahagi kepada beberapa bahagian.<br />

Hong Kong flour (I used all purpose flour)<br />1/2 tsp. baking powder<br />1 tsp. Instant Yeast<br />35 gm. castor sugar<br />40 gm. shortening<br />100 ml. water (if dough is too dry, add a little bit more water)<br /><br />Ingredients for fillings:<br /><br />Mix all together:<br /><br />100 gm. roasted groundnuts - blend<br />1 Tbsp. sesame seeds - roasted<br />30 gm. castor sugar<br />a pinch of salt<br />some water<br /><br />Method:<br /><br />(1) Mix all the skin pau ingredients into a mixer and beat till you get a smooth pliable dough. If it's too dry, add in a little bit water.<br />(2) Scale into a round ball and let it rest for 1 hour.<br />(3) Scale proved dough into 40 gm. portions and then wrap with fillings of your choice. You can either wrap with peanut fillings or red bean paste. Measure out all your ingredients and keep them ready.<br />-Mix milk, sugar and vegetable oil in a pan, preferably one big enough to mix the dough in too, less cleanup later. Scald (heat until just before boiling) the mixture. Leave to cool for 45mins to an hour. The milk mixture must be lukewarm at the end of this period. In case you leave it for longer, just warm it till its lukewarm.<br />-When the mixture is lukewarm, add the instant yeast. (if using active dried yeast, leave it for about 5-10 minutes till frothy and then carry on)<br />-Then add 260 grams of flour to the mixture. Stir with a spatula, you will get a batter that's quite sticky. Cover and let the batter sit for 1 hour or till double. Mine took an hour. It may take lesser time if its warmer.<br />-Mix the 33 grams (1/4 cup) flour, baking powder, baking soda and salt. Add this to the flour mixture in the pan. Mix till everything comes together. It will still be very sticky. You could make the rolls straightway or refrigerate the dough. I would not attempt handling the sticky mass at this point of time. Chilling makes it easier to handle. So transfer it to a large box, close the lid loosely. The box must be large enough to allow the dough to more than double and still have some space left over. You don't want a mess in your fridge when you wake up! Divide dough into half, refrigerate and use separately if you can bake only one small tray at a time.<br />-When ready to make the rolls, before you even take the dough out of the fridge, get these things ready. Line your baking tin with parchment and grease the sides. You could also bake two separate batches, taking out only portion of the dough at a time. Mix ground cinnamon and sugar in a small bowl. Have your silicon brush, soft butter, rolling pin, sharp knife or dough scraper, extra flour ready. Flour your work surface with enough flour. This being a sticky dough, it would otherwise be impossible to roll out. If you take the dough out first and then spend time on this, your dough will lose the firmness and will not be as easy to handle.<br />-Roll out the dough into a rectangular shape. I rolled it out into a 17'' x 11''rectangle aprox. This will be quite thin. Dust the dough and work surface with flour when necessary.<br />-Brush the rolled out dough with the butter. Sprinkle the cinnamon and sugar mixture evenly over the surface. Use your fingers to spread it if needed.<br />-Start from the opposite end of the dough, roll the dough neatly in a line towards you. Roll as tightly as possible. Dust fingers with flour if the dough feels sticky. Pinch the seams to seal.<br />Using a sharp knife or bench scraper (a bench scraper works really well for this), cut into1 inch thick slices and arrange in your pan(s). Place them spaced apart.<br />Let the the rolls double in size. This again took about 50 minutes. Preheat oven to 180 degrees C / 350 degree F towards the end of the rise time.<br />-Bake for 20 -25 minutes until golden brown<br />-Brush the rolls with melted butter for a softer crust.
