French Apple Cake One 9-inch (23 cm) cake 3/4 cup (110g) flour 3/4 teaspoon baking powder pinch of salt 4 large apples (a mix of varieties) 2 large eggs, at room temperature 3/4 cup (150g) sugar 3 tablespoons dark rum 1/2 teaspoon vanilla extract 8 tablespoons (115g) butter, salted or unsalted, melted and cooled to room temperature 1. Preheat the oven to 350ºF (180ºC) and adjust the oven rack to the center of the oven. 2. Heavily butter an 8- or 9-inch (20-23cm) springform pan and place it on a baking sheet. 3. The dough will be very sticky at first but will soon form a lump that won't stick to your hand so much. When that happens, knead the lump a little with both hands to work out any lumps of dry flour. Break off pieces of dough and roll them into balls about 5 in diameter. Flatten a ball with the palm of your hand then roll it out on a floured surface until it's about 12 cm in diameter. Toss it gently from hand to hand to shake off the excess flour, lay it on a plate and start on the next one. Once you've done three or four puris, put a large frying pan on the stove and heat some oil in it (about a centimetre depth). Fry the puris two at a time if they will fit side by side in the pan.
