Golden Peanut Butter and Orange Muffins
Resepi ni ambik kat majalah beberapa tahun lepas...hu..hu..tak ingat majalah apa.
Golden Peanut Butter and Orange Muffins
100g chunky peanut butter ( maisya guna creamy peanut butter )
80g margarine
150g fine granulated sugar
1tsp grated orange rind
2 medium-sized eggs
150g self-raising flour, sifted ( maisya guna tepung biasa + 1 1/2 tsp baking powder )
60ml orange juice
Orange Glaze ( maisya tak buat pun yg ni...malas..)
1 tbsp orange juice
1/2 tsp grated orange rind
100g icing sugar, sifted
Beat peanut butter, margarine, sugar and rind until light and fluffy.
Add egg, one at a time, beat well with each addition.
Fold in half the flour.
Add juice, followed by the remaining flour.
Spoon mixture 3/4 full into a patty tin lined with paper cases. Bake in a preheated oven( 190 C ) for 12 minutes or until golden brown. ( suhu dan masa bergantung pada oven masing-masing ye...)
Cool muffins on a wire tray.
To prepare orange glaze, mix all ingredients until smooth. It should be thick enough to coat the back of a spoon. If it looks runny, stir in 1 to 2 tsps more icing sugar. Drizzle a tsp of glaze over each cooled muffin.
